Less is more

When we introduced chickpeas as a side dish for our sandwiches and meals Over ten years ago, it wasn't about ticking a health box; it was because it's what the earliest civilizations consumed more than 9,000 years ago. So it was only natural to make it ourselves, using traditional methods and without any questionable ingredients. It's a truly nourishing accompaniment, not just a pleasant tapenade.

To this day, we continue to prepare it every day, without compromising on quality, and that is what gives it that very special taste at Libshop, which is hard to find elsewhere.

A simple recipe for homemade hummus

To make your own hummus, here are the preparation steps in the kitchen.

  • Soak the chickpeas in a bowl overnight. The next day, rinse them and cook them in a pot of simmering water for 60 minutes.
  • Blend the chickpeas with garlic, salt, lemon juice and tahini. Add spices like cumin if you like.
  • Add 12 cl of cold water or a few ice cubes to this mixture and then blend again.
  • Serve with a drizzle of olive oil, and optionally with cooked chickpeas, pine nuts, paprika, finely chopped parsley, etc…

Closing days 2025

As every year, all Libshop restaurants will be closed on the evenings of January 24th and 31st, as well as on December 25th. However, only the Libshop in Paris 1 will be open on December 25th.
