This week, we had the opportunity to have a delicious and inspiring exchange about healthy baking, sweet pleasures, and creativity in the kitchen with Antoine (@kookathome), a pastry chef with an atypical career path.

We talked about sugar, sweeteners, childhood, emotion, but also about this ongoing quest: to make something good, beautiful and just, without giving up on pleasure.

For several years now, we at Libshop have been interested in the healthy aspect of the sweet side of things. After choosing not to use any artificial flavor enhancers, and to focus solely on the power of marinades, herbs and spices to give flavor, we started using clarified butter (virtually free of lactose and impurities) for all our desserts, and we also reduced the sugar.
