To find them, we met the Bastani house, a creator of homemade ice cream, original, from whom we unearthed an absolutely incredible perfume, “Rose & Saffron” ice cream.
This is the traditional recipe for ice cream in Iran, called "traditional" ice cream or "Akbar Mashti". This luxury ice cream is rich in the thousand and one virtues of saffron and rose.
Saffron, kesako?
Saffron, poetically nicknamed "Red Gold", is a spice extracted from the flower of Crocus Sativus. It is obtained by dehydration of its three red stigmas, and its harvest is only done once a year, in October, for 2 to 3 weeks, hence its rarity.
Saffron stigmas, even in small quantities, produce a bright orange-yellow color. Its history goes back more than 3,500 years, and crosses several cultures, continents and civilizations. The first reference to saffron was spotted in Assyrian botanical writings from the era of Ashurbanipal (7th century BC).

Saffron was the spice of kings, celebrated for its gastronomic qualities while giving dishes magnificent golden hues. In addition to its coloring and aromatic power, saffron has four other gastronomic particularities: it is also antioxidant, natural flavor enhancer, harmonizing and energizing.
